«Baikal» Dessert
«Baikal»,
made in the shape of the lake, has become a signature dessert of the
restaurant. Its unusual taste is a combination of sea buckthorn mousse with
almond sponge cake, pine nuts and cranberry crustaceans.
The dessert
is covered with a blue glaze on top, symbolizing the natural crystal purity of
the lake. At different times of the year, the dessert, like the lake itself,
changes its appearance, for example, in winter our pastry chefs cover it with
white velour, and in autumn they add decorations of a bright autumn palette to
it.
